MUSE DESIGN AWARDS 2024 PLATINUM IN HOSPITALITY INTERIOR

Plan Do See brings its iconic Kawabun concept to New York City, all the way from Nagoya, Japan. The original venue and restaurant is a 400-year old structure that is the oldest Ryotei in Japan. Traditionally, a Ryotei was a speakeasy establishment where emperors and other important diplomats would gather by invitation only to have their meetings. Today, the concept comes to New York City while keeping traditional aspects of the Japanese establishment intact. The project features a plethora of natural finishes and experiential spaces to create a unique and diverse atmosphere. The first floor consists of two spaces, a bar and lounge, which holds true the ryotei experience of intimate and private spaces. The second floor, holds a dining room with large 12' ceilings complimented by a hanging Noguchi Light centerpiece and Kaiseki counter room called the Kawachiya Room, named after the fishmonger who founded Kawabun, Kawachiya Bunzaemon.

The Kawachiya room by Kawabun NYC is a premium dining experience featuring seasonal menus offered in an abridged lunch and a full tasting menu for dinner. We feature techniques and recipes spanning four hundred years with an eye towards innovating for New York.

Chef Ito Yoshitaka has been practicing his craft at the legendary Kawabun Ryotei in Nagoya, Japan since his youth. Hailing from a family of Washoku chefs, he applies his dedication and skills to bring a highly selective seasonal offering to New York to launch the first expansion of Kawabun since its founding in the early 1600s.

THE NEW YORK TIMES - OPENING

October 24, 2023 - New York’s Delmonico’s, going on 200 years, is a newcomer compared with Kawabun, in Nagoya, Japan, a Methuselah in business since the 17th century Edo period. It now serves Italian food. A branch, the first outside Japan, has arrived in New York with soba, not tagliatelle. Done in traditional Japanese style with a modern feel on the two floors that had been Kajitsu, it serves sushi, tempura, donburi, soba and more interpretive hot and cold specialties like salmon in miso, Wagyu stew, shrimp sando and a cold vegetable platter. It is owned by Plan Do See, a global hospitality company based in Japan that also owns Azabu in New York; the chef is Yoshitaka Ito.

*Correction: The Kawabun in Japan currently operates as two establishments; the traditional Japanese kaiseki cuisine restaurant, and Italian restaurant.

September 19, 2023 - Long before every other Miami restaurant was a New York transplant, Tribeca-based Azabu opened an outpost at the Stanton Hotel in Miami Beach. The sleek restaurant, with origins in the Azabu District of Tokyo, comprises three areas: a lounge offering more than 40 different whiskeys, the main dining room, and a hidden room called "the Den." The main room offers sushi and izakaya items from Azabu's robata grill, while the Den serves an incomparable omakase experience for fewer than a dozen diners per seating. The Den's pristine seafood, flown in from Japan, earned it a Michelin star.

17 GREAT PLACES TO EAT SUSHI IN NYC

August 1, 2023 - New York’s sushi scene has come a long way over the last two decades — so much so that great sashimi and nigiri can be found in most neighborhoods. Today, Manhattan has some of the highest-quality seafood found outside of Japan, and the city’s top counters are as good as many respected places in Tokyo. In the last year, New York has welcomed in top-tier players like Yoshino and more affordable counters like Gouie. One thing to note, though, is that thanks to recent inflation, many sushi spots have raised their prices anywhere from several bucks to $20 dollars or more, making those budget-friendly and casual spots even more desirable.

Sushi Azabu, Having started in a Tokyo bank, its first U.S. location for edomae sushi that opened in 2008 is still going strong. For $320, the omakase at the counter in the lower level includes four to six appetizers, nine to 10 nigiri and futomaki bites, followed by tamago, soup, and dessert.

July 26, 2023 - We've frequently shouted out Azabu for their Spice menus in previous years, and we're doing so again this year because they just refuse to let up on the deals. The Miami Beach sushi destination offers four courses for dinner instead of three, adding an additional appetizer for the same $60 price. For the first course, choose between hamachi jalapeño, a spicy tuna roll, scallops crudo, or a salad (either watercress with crispy rice pearls and pickled shallots or a house salad with grapefruit and kombu dashi dressing). The second appetizer heats things with lobster tempura, Wagyu gyoza, baked crab roll, salmon tataki, and various hand rolls. The main courses are all luxe takes on savory Japanese classics, from steamed salmon and chicken donburi to Wagyu hanger steak, miso black cod ($14 upcharge), and abura soba in duck confit. If you're feeling fancy, opt for more gourmet sushi ($18 upcharge) before ending with a dessert menu that includes mochi ice cream, a yuzu lime tart, or a Basque torta de queso. Miami Spice is offered seven days a week for dinner.

Beloved Miami Michelin-starred omakase speakeasy The Den has opened its second location at the recently renovated and reopened Sushi Azabu in Tribeca. Like the original, The Den at Azabu is a hidden jewel box of a space with an eight-seat counter and 14-seat dining room. The minimalist and calming room, inspired by a Buddhist aesthetic, is the perfect backdrop for chef Toshihide Terado’s beautiful and unique take on traditional Edomae-style omakase. Seasonality drives most of the fish you see on the menu as Terado will only serve Japanese species that are at their best at any given point of the year. On a recent visit, diners were offered buri (Japanese amberjack), ankimo (monkfish liver), kegani (horsehair crab), shirako (cod milt), and sayori (Japanese halfbeak).

The Den Omakase ($320), served only at the counter, includes seasonal appetizers, a selection of nigiri, soup, and dessert at the end. In the dining room, guests can enjoy the Chef’s Omakase ($210) from Azabu upstairs, seasonal sashimi, a Toro tasting, yakimono (grilled dishes), chef’s choice nigiri, miso soup, and dessert. No matter which option you choose, a night out at The Den at Azabu feels like a magical trip to Tokyo.

Omakase is a Japanese phrase that represents a chef’s choice meal—essentially the equivalent of a tasting menu. Named after its Miami outpost and flanked by tables with room to accommodate 14, here, Azabu’s original sushi chef from 2007, Toshihide Terado, is back after spending time at the Hong Kong outpost of Tokyo’s legendary Sushi Saito. Terado’s current $320 omakase changes daily and typically spins from four seasonal appetizers to around 10 nigiri bites, into his signature oversized triple tuna maki roll, made with marinated tuna, chu-toro, otoro, negitoro (tuna minced with green onion), and pickled daikon. Plan Do See and Tadao Ando balance past and future as they transform Nintendo’s former HQ in Kyoto into a boutique hotel, Marufukuro The former HQ of gaming giant Nintendo is getting a new lease of life as a boutique Kyoto hotel – Marufukuro – following a top-to-toe makeover by Tokyo hospitality group Plan Do See, in collaboration with Japanese architecture master Tadao Ando.

For decades, the building had been an empty landmark on a quiet Kyoto street corner, between Kyoto’s Kamo and Takase rivers – its ornate stone façade, forest green signage and art deco grilles contrasting with the traditional cityscape surrounding it. Now, it is set to offer a new spin on the ancient city’s long-standing balancing act between past and future.

The hotel spans three structures dating back to 1933. These were once the HQ and warehouse for the Kyoto-born Nintendo (whose distribution company at the time, Marufuku, specialised in playing cards), plus the residence of Nintendo’s founders, the Yamauchi family.

The buildings are a time capsule of early Showa-era architecture, riffing between Japanese and Western influences. Plan Do See’s renovation weaves a contemporary edge into the unique interiors, which remain awash with sweeping masonry, geometric motifs, art deco fireplaces and jewel-toned textiles.

Meanwhile, Ando created a new annex in signature swathes of concrete, while advising on the renovation of the original structures.

THE FORMER NINTENDO HQ IN KYOTO IS NOW A HOTEL

Marufukuro is set to open inside Nintendo's former headquarters in the same area where the gaming company was founded by Fusajiro Yamauchi in 1889. The building itself dates back to 1933 when the company was known as Yamauchi Nintendo and manufactured hanafuda (Japanese playing cards) and Western-style playing cards called karuta or toranpu. The sign outside the building plays homage to Nintendo’s humble beginnings with the words karuta and toranpu on the plaque.

The headquarters has remained vacant since 1959 when the company moved into a larger building. Giving the historical space a new lease on life, Tokyo-based renovation company Plan Do See has turned it into a brand new hotel. 

With the help of world-renowned architect Tadao Ando, who oversaw the hotel’s design and the addition of a new annex, the Marufukuro hotel is finally set to open its doors on Friday April 1.

December 28, 2020 - It is true that this New Year’s Eve will look different than most, as the coronavirus pandemic continues to keep us from partying like a typical Miami rage machine. But there are still celebration possibilities in which to partake, including a special dinner at one of our local restaurants. New Year’s Eve is all about looking ahead, so one can't be blamed for wanting to bid farewell to 2020’s bad juju with a sigh of relief over food and drinks at one of the restaurants below. AZABU MIAMI BEACH TAKES OMAKASE OUTSIDE

September 9, 2020 - At Azabu Miami Beach, the chef’s selection is as delectable as ever. Omakase at The Den is usually reserved for a small group in an intimate room. Now, chef Yasu Tanaka is taking the experience outdoors. What’s more, he is giving guests the option to have the experience in the comfort of their own home. Omakase To-Go is a chef’s selection of nigiri, seasonal sashimi, a selection of cold dishes, and wagyu and uni bara chirashi. As always, chef Tanaka places an emphasis on authenticity and fresh ingredients. Additional items from the Azabu menu (available to go and not to be missed): skirt steak toban with sweet onions and yuzu kosho butter, corn kakiage and chicken teriyaki with sweet tare and crispy Brussels sprouts. AZABU MIAMI PARTICIPATES IN 2018 MIAMI SPICE

July 6, 2018 - Miami Spice returns this August with prix fixe menus for some of the area's best restaurants at the reduced price of $23 for lunch and brunch, and $39 for dinner.
Running from August 1 through September 30, the program was started 17 years ago by the Greater Miami Convention & Visitors Bureau as a way to promote Miami's restaurants to visitors and locals. For the first time Azabu Miami Beach participates.  MIAMI NEWS TIMES

AZABU MIAMI BEACH GRAND OPENING

January 9, 2017 – Azabu Miami Beach, the famed michelin star NY restaurant is hosting it's Grand Opening on January 18th, 2018 in the heart of vibrant Miami Beach in the South of Fifth neighborhood. Located at 161 Ocean Drive in the Stanton Marriott. 

The South Beach location will house various concepts including a full-service dining room, plus two parts that aren’t available at its NY counterpart: a hidden sushi counter called The Den and Bar Azabu, a cocktail bar showcasing imported whiskies and sakes.

In the dining room expect a menu featuring Izakaya style dining with dishes like robata-grilled yakitori, Japanese fried rice served tableside on a Tobanyaki grill, sukiyaki, udon and the Instagram favorite, Raindrop Cake.

The Den will feature an 11-seat sushi bar serving sushi using imported seafood flown in directly from fish markets in Japan. It will feature a formal Omakase style dining experience, led by Chef Ken, previously of Shinji by Kanesaka, a Michelin-starred sushi restaurant in Macau, and Sushi Kanesaka in Tokyo, which also is a Michelin-rated restaurant.

As for Bar Azabu, it'll be helmed by bartender Davide Borgia and plans to use imported ingredients and Japanese-inspired presentation styles served in glassware handcrafted by a Japanese artisans. It also plans to carry an extensive list of imported Japanese sakes and whiskies, including several vintage varieties.
